Fire Island’s signature bread, our Rustic Wheat is made with an organic type 85 flour. Though type 85 flour is not 100% whole wheat, it has much of the grain and germ added back in. This lends the bread a higher fiber content and a hearty, nutty taste and allows it to maintain a softer texture than a 100% whole wheat.
