Our cakes are layered and come in two sizes (4” and 6” in diameter). Tart shells are made with whole-wheat pastry flour and also come in two sizes (5.5” and 9” – special order for large tarts). Most cakes and tarts are best served at room temperature. Pies are made for Thanksgiving only.

Chocolate Cake with Chocolate Frosting | Rich, bittersweet chocolate cake layered with buttery chocolate frosting. A top chef told us it was the best chocolate cake he has ever tasted.

Carrot Walnut Cake with Cream Cheese Citrus Frosting | Janis and Jerry’s wedding cake recipe! A layered cake comprised of carrots, roasted walnuts, shredded coconut, pineapple chunks, walnut oil, and spices. Complete with an orange-flavored cream cheese frosting.

Almond Cake with Cherry Compote & Meringue | Almost a European torte, this almond paste pound cake is filled with a boozy cherry compote and frosted with toasted meringue.

Pear & Frangipane Tart | White wine poached pears nestled in an almond/pastry cream filling. An elegant dessert.

Blueberry Crumb Tart | A homey dessert made with blueberries and a nut-free streusel topping.

Chocolate Pecan Salted Caramel Tart | A creation of Emily, our senior baker, it is a tart shell made of candied pecans, filled with caramel, chocolate ganache, and topped with sea salt. This is our sweetest dessert – more of a confection than a tart.

Fresh Fruit Tart | Sweet pastry cream topped with beautiful fresh fruit. A treat for Alaskans, this dessert has a fleeting presence in the display case!

Pecan Tart | This pecan tart uses only eggs and butter to create a perfectly chewy and not cloying sweet tart. Since Fire Island uses no corn syrup, we had to research and experiment to create this great tasting pecan filling.

Lemon Curd Tart with Meringue | For the citrus lovers, an amazingly delicious curd complete with toasted meringue.

Rustic Galettes | A difficult, hand-crafted dough that is free-formed and filled with various fruit fillings.

Apple Pie| A traditional American apple pie. Double crusted and heaping with an assortment of fresh apples. Special order for Thanksgiving.
